I have partnered with Sfoglina Pasta this holiday season with a lovely gift idea. You will receive one jar of Fox Fungi Pantry’s Wild Mushroom Confit and one bag of handcrafted Sfoglina pasta. Included is a recipe for wild mushroom brown butter carbonara by Executive Chef Jesse of Sfolinga. All items are packaged in a beautiful gift bag ready for immediate gift giving. A little about Sfoglina: definition: a woman who rolls and spreads out pasta dough. About the PastaSfoglina uses local heirloom and heritage grain that are stone milled, utilizing bronze dies and slow drying of the pasta. Implementing these procedures not only leads to a better flavor but is also is a healthier, more nutrient-dense final product. Local Heritage GrainsWe at Sfoglina have always been huge advocates of supporting local and small businesses and will source from them whenever possible. Supporting Colorado owned businesses help keep our economy healthy. Also, sourcing local is better for the environment and reduces the trail the food takes to get from the farm to your mouth. The Wild Mushroom Confit is small batch, slow simmered for several hours with a large variety of mushrooms in a deeply flavored broth of white wine, apple cider vinegar, agave and seasonings until reduced into a savory confit. Both businesses are woman owned in Colorado. Delivery in Colorado will be the week of December 13th. Chicago flight attendants! Delivery will be made on December 8th and December 21st.
